Da Grateful Dough
With a pledge to source only the finest ingredients, Da Grateful Dough is crafting artisanal pizzas with the help of suppliers from Upcountry Maui and Italy. The latter provides this humble yet elevated food truck with non-GMO, pesticide-free Polselli flour, which is used to create a 72-hour, slow-rising biga pizza dough. Fiyah Foods
This pop-up food truck can be found all over Maui at different events, but always with the same powerful flavors. The menu is subject to change, but some standouts include a signature tempura-fried musubi; Fiyah Fries topped with fishcake and Spam; and pork lumpia. Pupus On Da Go
Pupus On Da Go is serving up light local bites every weekend. Get this tasty takeout on Saturdays at Maikaʻi Market Maui, Kahului’s newest food truck pod, and Sundays at the Maui Sunday Market. Tabay’s Mindful Kitchen
An 18-year-old from Southern California relocated his acclaimed food truck to Maui, where he continues to serve inventive plant-based fare. If you can think of a meat alternative, Tabay’s has it on this extensive menu. Thai Esan Maui
The latest addition to the Wailuku Food Trucks pod, this eatery is serving up traditional Thai food for a taste of authentic East Asian cuisine. Choose from appetizers like moo tod (fried pork) or steamed dumplings; soups and salads like soop nor mai (bamboo shoot salad), tom kha (coconut soup) and gaeng om gai (Isan-style chicken curry); plus rice and noodles including fried rice, lo mein kee mao (drunken noodles) and, of course, pad Thai. Family-owned and -operated, this food truck offers authentic Asian cuisine that’s a fusion of Chinese, Taiwanese and Japanese dishes.
